Details
An exceptional wine from Foradori, the Fuoripista - ‘off-piste’ - is Pinot Grigio but not as you know it. This minimal intervention beauty spends more than eight months on its skins inside Spanish clay tinajas, producing a wine of energy and decadence that is clean, complex and textural. Amber-hued, with summer forest berries and kiwifruit flavours, a crisp but rich mouthfeel, and an exciting tannin grip to finish. Wondrous.
Elisabetta Foradori is considered one of the most influential winemakers in the world. Her winery is situated in the cool hills of Trentino in northern Italy, and a landscape of extraordinary beauty. Her focus is on the indigenous grapes Nosiola and Teroldego, with Foradori’s examples being amidst some of the best in the world. Since 2002 Elisabetta has farmed her land using biodynamic principles, and her winemaking remains ‘natural’ with very little intervention. Today her children Emilio, Theo and Myrtha oversee the smooth running of the winery, supported by Elisabetta. Foradori wines are artisanal in the true sense of the word; naturally fermented, and aged in various vessels according to their needs: stainless steel for freshness, cement to regulate temperature, or Spanish clay tinajas (amphorae) for their energy and ability for the wine to reconnect with the earth. These wines are scarce and highly sought-after by collectors and wine lovers across the globe. They are truly unique, original wines of personality and purpose, and the Good Pair Days team is very excited to have them on board.

Pairing guide
A glorious and 'skinsy' example of Pinot Grigio from Foradori really delivers when it comes to brightness, balance, and irresistible flavours. It’s a great food pairing wine, especially for those who love the gently spiced taste of Middle Eastern and Moroccan cuisine - falafels, salads with tahini sauce, stewed beans, and classics like tabbouleh will all taste fantastic with this wine. It’s also great with grilled white meats, fish, salads with nuts and grains, and richer seafood.

Wine region

Trentino, Italy
Trentino is located in the north of Italy and is part of the broader wine region of Trentino- Alto Aldige. The region borders Lombardy to the west and Austria to the north. Known for producing delicious red wines like Teroldego, and white wines like Nosiola, this region has a unique alpine climate that allows grapes to ripen perfectly. The soils vary, from sandy to clay, giving the wines unique characteristics. There is also a distinctly German feel here with varieties like Müller-Thurgau grown here.
