Sourced from the hillside estate of Fontanasanta (meaning ‘holy water’), situated in the hills above Trento, this unique white, from the almost forgotten indigenous Italian grape Manzoni, is as much an experience as anything else. Elisabetta Foradori is famous for revitalising these old grapes, and here, with a little skin contact and a whole lot of love, it translates into a white of fantastic mineral freshness and yet these nutty rich almost pineapple fruit.

Elisabetta Foradori is considered one of the most influential winemakers in the world. Her winery is situated in the cool hills of Trentino in northern Italy, and a landscape of extraordinary beauty. Her focus is on the indigenous grapes Nosiola and Teroldego, with Foradori’s examples being amidst some of the best in the world. Since 2002, Elisabetta has farmed her land using biodynamic principles, and her winemaking remains ‘natural’ with very little intervention. Today, her children Emilio, Theo and Myrtha oversee the smooth running of the winery, supported by Elisabetta. Foradori wines are artisanal in the true sense of the word, naturally fermented and aged in various vessels according to their needs: stainless steel for freshness, cement to regulate temperature, or Spanish clay tinajas (amphorae) for their energy and ability for the wine to reconnect with the earth. These wines are scarce and highly sought-after by collectors and wine lovers across the globe. They are truly unique, original wines of personality and purpose, and the Good Pair Days team is very excited to have them on board.

Manzoni wines aren’t as well known as other key Italian white wine styles. Still, these unique Italian whites are gaining traction here in Australia on the back of international treasures like this one from Foradori. It’s a brilliant fish-pairing wine; we especially loved it with homemade sushi and sashimi platters, Asian specialities featuring ginger and citrus marinades, and Sichuan white fish with heaps of fiery chillies. It’s also a great choice for spicy pasta dishes, white meats like chicken and turkey with orange and lemon, and crisp green salads and salty cheeses.

The Vigneti delle Dolomiti wine region is located in northeastern Italy, at the foothills of the Dolomite Mountains. The region thrives in a cooler climate and features a diverse range of soil types, including clay, limestone, and volcanic soils, which create unique terroirs for grape growing. How good is ‘dirt’ talk? The prominent sub-regions of Vigneti delle Dolomiti include Trentino, Alto Adige, and Val di Cembra, each with their unique microclimates and grape varieties. The region is known for producing a range of wine styles, mostly it’s crisp and aromatic white wines made from grapes such as Pinot Grigio, Chardonnay, and Gewurztraminer, with smatterings of bold and fruity red Lagrein, Teroldego, and Pinot Nero here and there.
