What a wine! This is Champagne of epic proportions, built on a base of biodynamically-grown Pinot Noir, from vines over 20 years old. This provides a firm yet succulent fruit profile that ranges from raspberry to blackcurrant, all backed up by the chalky bite of the classic Champagne limestone soils. Fresh yet obviously rich, this is a Champagne for all times, and can easily be matched to richer foods as well as being a great glass to start the night. ps - The name Blanc de Noirs translates to 'white from black', and is an indication that the white wine is made only from grapes with dark skin - 100% Pinot Noir. Wines like this often show the power of Pinot Noir, and this flavour is further accentuated by the gentle use of oak in the aging process.

An ancient estate, with hallowed vineyards and already producing great wines decides to move against the grain and commit to a relatively unknown style of viticulture, based on the belief that 'it's just better' - sounds crazy right? But that's just what JP Fleury did with his family estate (founded in 1895!). He started with an experimental seven-acre plot in 1989 and then by 1992 had converted all the family vineyards to be the first certified Biodynamic producer in all Champagne! This method of farming, established by Austrian thinker Rudolf Steiner back in the late 1800s, mandates only doing work according to the phases of the moon, and uses organics as a base and builds upon it in cosmic and somewhat mystical ways. There's no denying the outcomes however - vines are longer-lived, healthier and more vigorous. The great thing Fleury them is that they have been biodynamic for so long that the vines have now gained maturity under the natural inclinations of this rigorous regime. Most of their vineyards are dedicated to Pinot Noir, and so it makes sense that their strongest wines are made from this noble variety. Their wines are powerful and yet precise, and speak clearly of the soil in which they are grown.
