Albarino is hot property in Spain, and has a reputation as a refreshing yet textural drop. This pristine example from Ethereo shows why - it is coolly refreshing, filled with flavours of pear, grapefruit and salt. The texture is succulent and fleshy, with plenty going on. A real joy to drink, this is a real warm-weather winner!

While the winemakers of Bodegas Eidosela go to great lengths to respect the winemaking practices of their region, their philosophy includes not shying away from combining tradition with state of the art technology. As such, their operation features temperature controlled, stainless steel tanks, designed to achieve that perfect blend of sharpness and balance from their perfectly ripened Albarino grapes, all handled with an artisanal touch that provides plenty of charm and personality. The variety Albarino is native to the north-western corner of Spain, and finds its niche in the coastal and river region of Rias Baixas. Here, a mixture of the coastal winds, old vines and sandy granite soils combine to produce a perfect hotbed for the growth of high quality grapes. To maximise the potential, the growers of Rias Baixas use an ancient vine trellising system called enforcado to keep the grapes high off the ground and surrounded by the cooling sea breezes. The Ethereo wines are coolly refreshing, and are a perfect summer tonic!

We’ve said it before and we’ll say it again: Albarino has to be one of our favourite white wines, and every time we drink it, we fall in love a little bit more. Few white wine varietals in the world work as beautifully alongside simple fish dishes as this one does, so for best results, serve it nicely chilled alongside pretty much anything that’s very recently come flapping out of the sea. It’s especially good with cod, sea bass, squid, octopus and shellfish like mussels and cockles, but you can experiment pretty widely with this wine - enjoy!

Rías Baixas, Spain
Rías Baixas is a region in northwestern Spain that is responsible for Spain's greatest success story when it comes to white wine: Albariño. The region is broken down into a number of sub-zones, each with their own unique influence on Albariño. However, they all largely share one common characteristic: proximity to the Atlantic. In fact, some of these coastal vineyards are so close to the ocean that the salty sea air quite literally settles on the fruit, sometimes giving the wines a wonderful saline, salty tang. Whilst this is quite a wet region, there is plenty of sunshine for ripening grapes and many of the vineyards are planted on granitic soils, offering up firm, fresh acidity to these wines. Albariño is commonly known for its refreshing character with notes of crisp apples and citrus, but there is plenty of experimentation at play in the region and it's not hard to find examples from more experimental winemakers.
