Amos and Alex currently only make three wines, but they are brilliant, highlighted by this sparkling - a Cava made in old way, a method ancestral, where the ferment finishes in the bottle. It's made from the local variety Xarel-lo and has no added sugar, so is bone-dry and super fresh. It's loaded with ripe citrus and floral notes, and has a fresh, saline finish. Wonderful.
Amós Bañeres Merinero & Alex Ruiz Masachs are the founders of Els Vinyerons, making wines from organically grown grapes from Alex's parents vineyard. Theirs is a project to make wines with a considered move away from large scale farming, focussing on full organic practices. This philosophy is carried right through to the winery; they only use spontaneous yeasts, minimum intervention, no synthetic products and there are no preservatives used either. They are making a modern expression of their terroir, but using ancient practices to do so. Of particular interest is their Cava - made in the style of a Pét Nat, but not cloudy. It is fine, alluring and fresh. All their wines are free of preservatives, but this is the most successful, the CO2 from the sparkling ferment working to protect the wine as it ages. A range of great wines!

Displaying a seriously impressive salinity and freshness, this Pétillant Naturel from Els Vinyerons is a fantastic example of the winery’s ‘raw wine’ stylings, bursting with character and amazing levels of expression. It’s hard to imagine a better pairing for this wine than battered and fried shellfish and seafood - it literally tastes like a day on the Catalan coastline. Octopus and squid would be other obvious choices, along with sardines, breaded chicken, and simple tapas dishes with a hearty drizzle of olive oil. Nice!
