Petit Manseng wines, such as this beautiful biodynamic bottle from Domaine Lajibe are a rare and curious treat, expressing plenty of its Jurancon terroir tucked in a pristine corner of the Pyrenees mountains. We found this wine to work especially well with dishes that exhibited a balance of flavour profiles, especially Thai pork, chicken, fish or tofu creations that strike the perfect note between salty, sweet, spicy and sour. Freshwater fish would also work well, as would breaded veal or pork cutlets, barbecued fish with pineapple salsa, and soft cheeses with charcuterie and dried fruits.
