The Domaine de Vedilhan Viognier is a study in balance - rather than the intense, bombastic flavours that this variety if often known for, this wine is elegant and fresh. It was picked early during the warm 2017 vintage to maintain both acidity and fresh aromatics. To further this, the wine was made without any oak Honeysuckle and apricot on the nose; richly textured and nicely balanced with flavours of more ripe apricot and peach. The wine finishes fresh, with a delicate almond-like bitterness on the finish.

Languedoc wineries have always struggled with the blazing Mediterranean heat which beats down on this corner of France, but the Fayet family have found the perfect way to keep their vines refreshed and capable of slow, steady ripening: they make great use of the springs and brooks which cut their way through the vineyards, ensuring the Viognier vines (and other local varietals) don’t suffer from drought. With an incredible complex terroir of limestone and sea shale, and sands, and winemaking methods which eschew oaking to ensure maximum fruit character, the white wines of Domaine de Vedilhan are a masterclass in the crossover between classical French and contemporary Languedoc viticulture. Richly flavoured, beautifully aromatic, just a little decadent… there’s not a lot about Viognier wines we don’t like, and this example from Domaine de Vedilhan is about as good as they get. When it comes to white wines which pair superbly with a wide array of our favourite fish and seafood dishes, Viognier really is where it’s at: bring this bottle together with luxurious lobster, scallops, or fat, juicy prawns in a cream sauce, and you’re absolutely onto a winner. You can also get great results pairing this wine with roast chicken, grilled pork, and everything from Vietnamese to Thai dishes, as Viognier loves a bit of chilli heat.
