Details
You can't miss the lively red fruit in this lovely bright wine. Made from Cabernet Franc, It tastes of raspberries and redcurrant with a little hint of leafiness and lightly bitter edges that contrast so well with that joyous fruit. It's light, but not lacking, in a style that sits on the edge between light chillable red and something a bit more substantial. Actually, served chilled would be great regardless as the freshness here is unmistakable!
Jérôme Billard's family property, located in the pretty Chinon appellation of France's Loire Valley, has quite a history. It's thought to have once been property of the Knights Templar, with a backstory that dates back to the Middle Ages. Indeed, the winery still has a 17th-century fermentation vat inlaid into the floor. But despite that legacy, the vineyards were abandoned until Jérôme’s grandfather bought the property in the 1950s. After a winemaking world tour that took him from Bordeaux to Hawke's Bay, Jérôme has now taken over the estate and turned it into a deeply impressive organic operation. Vital Cabernet Franc & textural Chenin Blanc are the start here, with a unique vitality and energy that feels like springtime in a glass.

Pairing guide
This beautiful Cabernet Franc from Domaine de la Noblaie is a gorgeous example of classic French winemaking with a thoroughly contemporary outlook. It’s a great bottle to bring out at a dinner party or gathering of friends and food, and will pair very well with sharing dishes featuring roast chicken thighs, chorizo, smoky and aromatic herbs and spices, and roast potatoes. Lentil stews, French bistro classics like ratatouille and cassoulet, bangers and mash and Sunday roasts will also work a treat, although picnics and brunch is an even more attractive time to drink this delight.
