Jacquere traditionally produces a zesty, lean white wine, with a taut structure but instantly approachable. This is no exception - there is something deeply versatile here - it can be drunk just as easily in the summer heat or in the cool depths of winter. Steely, flinty and lean, with flavours of fresh lemon and green apple coming through.
Domaine de Chatillon is the personal project of Ed Peter, the owner of famed Yarra Valley estate Yarra Yering. Vines up to 40 years of age grown in Chautagne area of Savoie close to Lac de Bourget (which used to be called “Chatillon”) south east of Annecy in the French Alps. The label depicts the castle Chateau de Chatillon that dates back to 1125, and has now been refurbished into a residence, situated on the property. The Chautagne area of Savoie enjoys warmer daytime climate (with alpine cold nights) and the only area in Savoie where red wines are dominant. The practices are of the highest order to create these brilliant wines - organic viticulture, 100% estate grown fruit, handpicking and hands-off winemaking : wild yeasts, some solids in ferments, no oak maturation. Mondeuse is one of a small handful of local varieties that are slowly being found elsewhere outside of the Savoie, but the domaine also focusses on locals like Jacquere and Altesse. Light bodied, beautifully crisp and displaying a steely minerality - this Jacquère wine from Domaine de Chatillon ticks all the right boxes from the very first sip. All that refreshing character makes it an absolute winner when it comes to food pairing, and we loved this bottle with soft ripe cheeses - brie and camembert, especially - as well as with fish or seafood pate, tempura prawns and calamari, grilled snapper, oysters and smoked salmon. Green leafy salads and vegetable dishes will work well, and it’s also excellent with lighter dishes featuring smoked ham or bacon. Fantastic!
