Details
Chanterêves is one of those producers to remind us that Burgundy is about farmers, not big corporate winemakers. This white comes from organically farmed vineyards, is fermented with native yeasts, and is aged in older barrels, feeling very bright and pristine. Cool, sophisticated, and pure, with layers of lemon peel, a little white flowers, and white peach, with just a little oak creaminess for complexity. Precise, yet approachable drinking right here.
Chanterêves (or Chantereves) is a French wine estate with a wonderfully unconventional origin story. On the one side, you have Guillaume Bott, who grew up in the heart of Burgundy, trained at some of the region's most storied estates, including Domaine Etienne Sauzet and Domaine Simon Bize et Fils, and spent more than two decades very much in the heart of the region. By contrast of Tomoko Kuriyama arrived from Japan via Germany, where she completed a viticulture and oenology degree at Geisenheim University and honed her craft across some of Germany's most respected estates. The two met during the 2005 harvest at Simon Bize, and the rest, as they say, is history. The name Chanterêves nods to the street where the winery sits, with a small twist that conjures the French words for "to sing" and "dreams" -- a pretty perfect fit for a project built on patience. We say patience because it took a good decade in Burgundy working for other people before the duo could devote themselves to this label. The wines are worth it, though - lucid, minimally handled white and red wines that feel very real.

Pairing guide
One of those rare whites that genuinely does it all, this Burgundy is equally happy alongside a roast chook, a creamy risotto, or grilled bream as it is being sipped on its own while you figure out what to cook. Mushroom dishes are a natural match, and for a vegan-friendly option, try it with lemon-and-thyme-roasted root veg on a white bean purée, or a cashew-and-mushroom pasta, where the wine's bright freshness cuts through the richness while its silky texture matches that proper creaminess. Elegant enough to feel a little special, relaxed enough for a Tuesday night.

Wine region

Burgundy, France
Burgundy is located east between Paris and the Swiss border and is known for producing some of the finest and most sought-after wines (Chardonnay and Pinot Noir) in the world. The region can be divided into the following sub-regions from north to south: Chablis, Côte d'Or, Côte Chalonnaise, and Mâconnais, with parts Beaujolais to the south now under consideration.
Chablis is located north of the Côte d'Or and is known for its crisp, dry white wines made from Chardonnay, made without the influence of oak. Some of the best domaines in Chablis include William Fèvre and Christian Moreau.
The Côte d'Or is the heart of the Burgundy wine region and is divided into two main areas: the Côte de Nuits and the Côte de Beaune. The Côte de Nuits is known for its red wines, while the Côte de Beaune is known for its white wines. The best domaines in the Côte d'Or include Domaine de la Romanée-Conti and Domaine Georges Roumier!
Mâconnais and often overlooked Côte Chalonnaise produces red and white wines. Some of the best domaines in these regions include Domaine Bouchard Père et Fils and Domaine Jean-Jacques Girard.
