Details
This Fourchaumes vineyard is named L’Homme Mort after the skeleton of a civil war soldier that was found by Boudin’s grandfather. Morbidity aside, this wine has enough energy to raise the dead with crisp green apples and plenty of searing acidity. Make sure you enjoy this alive as opposed to leaving it in the cellar for too long.

The beauty of multi-generational wineries in Europe is the stories that come out after so many years of making wine. Chantemerle is owned by the Boudin family and whether it is the story of Boudin senior hiding in wine barrels during WWII or finding skeletons in vineyards there is plenty of yarns to be told around a good bottle of wine. The winery is based in the heart of Chablis with a firm focus of producing energetic and precise wines from their estate in La Chapelle. The winery is now oak free, maybe after a few heated discussions, with a focus of using cement and steel for ageing the wines. Francois is the new generation at the helm and he is diving head first into continuing the exceptional legacy that his grandfather started. The wines under this label are bursting with energy and showcase the hallmarks of well-made Chablis. Just make sure that you enjoy these wines with family along with a few stories from yesteryear.

Pairing guide
You really can't beat the charm and elegance of a top-notch Premier Cru Chablis. You'll want to pair this wine with fresh, bright and clean flavours - smoked fish, oysters, goat's cheese and sushi are all highly recommended in this vein. Roast cauliflower and cauliflower soup will be wonderful, chicken spiked with citrus and herbs will be fantastic, and pork tenderloin with green olives will also hit the spot perfectly.

Chablis, France
Chablis is located in the northern part of Burgundy and is known for its very distinctive style of Chardonnay. The region is famous for its limestone-based soil types, known as Kimmeridgian marl which is made up of oyster shells that settled on the ocean floor a very long time ago. This is what makes these wines so unique with the mineral profile to the wine that has made Chablis an adjective for steely Chardonnay worldwide.
