White Burgundy has a reputation for being unapproachable and unattainable. This white is neither! Sourced from the twin villages of Viré & Clessé in the southern end of Burgundy, this wonderfully vibrant and generous wine comes from soils famously littered with fossilised oyster shells. There's a beautiful minerally freshness here as a result (can you taste oysters?), but also a layer of white peach fruit, with hints of orange blossom and tropical fruit thanks to a dollop of the rare local Chardonnay Muscaté grape in the blend.
Founded in 1750, Chanson is an estate steeped in centuries-old tradition and rich in viticultural history. As a négociant (winemaker and merchant) and a domaine (vineyard estate), Chanson has represented the best of Burgundy for more than 270 years, growing its own grapes, partnering with other growers, and bottling, selling, and shipping its own wines. Chanson's holdings comprise some of Burgundy's most coveted vineyards. Located in the heart of the Côte de Beaune, the historical centre of Burgundy, it is surrounded by some of the greatest vineyards in the world. Its celebrated bastion, a 15th-century fortress acquired in 1794 to cellar the wines, is an internationally celebrated icon of Burgundy and the largest of six bastions that form part of the wall surrounding the city of Beaune. To visit Chanson is to travel back in time and experience the magic of a 1000-year-old winemaking tradition. Chanson still vinifies and cellars its wines in the bastion as it has for over 200 years, as the ten-metre thick walls of this ancient fortress make it ideal for winemaking.

Pairing guide
With a unique mix of minerally freshness and some lovely juicy fruit, this versatile and fresh white wine is a real friend in the (pairing) fridge. Fresh and yet flavoursome Vietnamese chicken or fish dishes would work wonderfully, as would a range of fresh salads and even slightly creamy chicken pasta or tofu stir fry. You could even go for fish tacos or mild Mexican dishes (but chilli will overwhelm the flavours). It is important not to serve this wine too cold, as you'll lose some of the fruit complexity. Take it out of the fridge and leave it for a few minutes for best result.

Burgundy is located east between Paris and the Swiss border and is known for producing some of the finest and most sought-after wines (Chardonnay and Pinot Noir) in the world. The region can be divided into the following sub-regions from north to south: Chablis, Côte d'Or, Côte Chalonnaise, and Mâconnais, with parts Beaujolais to the south now under consideration.
