What an elegant and savoury traditional method sparkling from the underrated Limoux region! Toasty, flinty with a touch of preserved lemon. This wine has great depth of flavour and plenty of flesh on its finely laced bones — juicy with notes of golden apples, and yellow pear held on a medium body with a broad mouthfeel. That perfect balance of elegance and richness with a sultry seashell mineral finish. Very great drinking.

Domaine Bouché is a labour of love, excellence, and legacy. It all started In 1920 when Abel Bouché began to farm one hectare in Champagne (that's small!). Over several generations of passionate lineage committed to growing quality grapes, the family decided to extend their involvement in the process and starts making wines too! Though Champagne may hold more fame, in search of more vines to make wine from, the family began a search for new terroir. They decided to settle in Digne d'Aval, a former village in the Limoux region of southwest France — the land of the very first sparkling wines in the world! Today the Bouché estate covers 40 hectares and the fourth generation is running the ship, three brothers, Guillaume, Valentin, and Paul. Their method is the traditional one, much like the world's finest fizz, making wines of immense finesse, elegance and refinement.

This Blanquette de Limoux from Domaine Bouché is a real treat to the senses, and a powerful example of the kind of quality you can get when you seek out French sparkling wines outside of Champagne. As expected, it’s a wonderful wine when it comes to food pairing; it’s delightful with Asian noodle dishes, delicious with fried chicken, breaded pork cutlets, and crispy beef, and divine with seafood, chilli-spiked broths and curries, and a big bowl of chips. It’s also very good for pairing with desserts featuring orchard fruits and nuts, too!
