A savoury, vibrant sparkling rosé from the Cava heartland, on the edge of Barcelona. This is a triumphant wine - dry, fresh and tangy. Lots of red fruit and a hint of peach, with some saltiness and a roundness like honey. Really versatile, and a great sparkling wine for summer.
Spain’s Catalan region is known as much for its ferociously independent attitude as it is for its sparkling wine production. Cava is, has been, and always will be the flagship wine style of the region, and Dignitat - a traditional Cava winery - has just celebrated its centenary year of crafting this most delicious of Spanish creations. Now in its fifth generation of family vignerons, what the winemakers of Dignitat don’t know about Cava simply isn’t worth knowing. With the meticulously-minded Alex Ruiz-Masachs currently at the helm, the winery is focused on gripping tight to its traditional core (which includes hand-picking their beautiful Xarello and Macabeo grapes) while upping the ante with contemporary tech, allowing them to elevate their wine to the next level of deliciousness. The results well and truly speak for themselves.

Sparkling rosés are renowned for their food pairing qualities, and sit in that sweet spot between fruitiness and freshness that makes them capable of tasting great with almost anything. Probably the most satisfying pairing for this Cava would be a platter of cold cuts, Italian salamis, cheeses and olives, but if you’re going to serve a proper dinner with it, there’s plenty of options which are going to be surefire winners. Cheese and cream sauce dishes are always good with rosé sparklers, but the real marriages made in heaven are going to be dishes which use fresh shellfish (including sushi), smoked salmon, and greens such as asparagus.
