Aligoté is the sometimes-forgotten white grape of Burgundy, often derided as Chardonnay's lesser cousin, but in reality so much more. Drink this and see why. Lean to start, but takes on shape and power the more air you give it - there's yellow apple, white peach, lemongrass and lime leaf and plenty of chalk. it's tense, grippy and long, with plenty of gastronomic potential. Delicious stuff.

Denis Bachelet has achieved great things. As the custodian of a tiny estate (consisting of approximately 4 hectares) situated in the Burgundian region of Gevrey-Chambertin, his work is painstaking and the results miniscule, and normally expensive! His is essentially a solo operation, working by himself since 1983. Don't be fooled though - his ability to produce wines of elegance, finesse and grace is recognised the world over. The future is in good hands as well, with is son Nicholas recently joining him in the cellar. Tireless work and sacrifice for ultimate quality is his MO. There's no excessive ripeness or oak here - indeed he uses concrete and stainless steel vats, with a long cold maceration to preserve freshness of the wines. In the vineyard, the approach is based around sustainable viticulture. He softly coaxes the whispers of the vines into the bottle and captures a moment in time. The drinking of such wines deserves your attention and thoughtful consideration.

We just can’t get enough of this bright and fresh Aligoté wine from Denis Bachelet, which brings really Gallic sophistication to our table with its crisp character and fantastic food pairing potential. It’s best served with classic seafood dishes like moules mariniere, fresh oysters and scallops with charcuterie, and will also provide excellent pairing possibilities with river fish and Moreton Bay bugs. Pork sausages, delicate meats like veal and fattier meats like duck legs will also be excellent here, and it’s also a winner with green vegetables like asparagus, marinated tofu and goat’s cheese salad.

Burgundy is located east between Paris and the Swiss border and is known for producing some of the finest and most sought-after wines (Chardonnay and Pinot Noir) in the world. The region can be divided into the following sub-regions from north to south: Chablis, Côte d'Or, Côte Chalonnaise, and Mâconnais, with parts Beaujolais to the south now under consideration. Chablis is located north of the Côte d'Or and is known for its crisp, dry white wines made from Chardonnay, made without the influence of oak.
