This unique spirit is Scotland's first and only rum. Crafted using a global garden of aromatic ingredients, the mix includes freshly peeled oriental ginger, Thai green peppercorns, Indonesian long pepper, and South American allspice berries. There's a bit going on. All of that aromatic magic helps make this wonderfully fragrant and richly spiced rum a seriously complex drink. With no vanilla in the blend, it's a more savoury drink, too - something that never feels too heavy, but gloriously intense with silken caramel deliciousness.

The Dark Matter story started with a question. What if you set up a rum distillery... in Scotland? This was a wild idea for brothers Jim and John Ewen, and it didn't seem to have much support. But they did it anyway, founding Scotland's first rum distillery in 2015. From the start, the brothers wanted to make something unique in their small (but perfectly formed) Dark Matter distillery in Aberdeenshire and set about scouring the globe for ingredients. Flash forward a few years, and with the help of ex-distiller from Berkshire Mountain Distillery in the US, Cory Mason, Dark Matter boasts a tight range of simply brilliant rum (and rum liqueurs).

It’s impossible not to be seduced by the rich flavours and warmth of this delicious spiced rum, which is going to work just as well sipped neat over ice as it will in an inventive cocktail. It’s the kind of spirit that deserves to brought out alongside equally tropically-influenced desserts; spiced roast pineapple, tarte tatin with apricots, apples, pears and whole spices, warm mango rice pudding or fresh papaya with a squeeze of lime will do very nicely indeed. It’s also surprisingly good with very dark chocolate, aged charcuterie and cheese - give it a try!
