Curator Wine Co is a labour of love by young viticulturist and winemaker Tom White. Inspired by his father, who tended vineyards in cooler parts of Australia, he set up shop in the Marananga subregion of the Barossa Valley in 2012 and hasn't looked back. The property he runs with his wife Bridget is a sizable 30 acres in size, with 22 acres of vineyard. The vines spread across the estate are planted on a complex mix of soils, producing fruit that has differing profiles every year. Tom is passionate about curating individual wines from each block, to show the differences in soil profiles, rootstock, and vine age. His end goal is to make wines that reflect their site through minimal handling and intervention, with complexity aided by time in barrel to soften the wines and bring an extra layer of detail. The Hamlets range is an ode to the old towns from the early Barossa years and the traditional ways of the German migrants.

This zesty Barossa rosé wine is a real joy to the senses, bursting with an interesting array of fruit flavours, and possessing an unusual savoury quality that makes it really fun to pair with food. We loved pairing this wine with Asian-style beef, quick-fried and served with chilli, and it’s also a great pairing for duck salads and duck ramen. Char siu pork is also a great option, as is citrus or vinegar. Tangy and delicious!
