Soave wines are - quite rightly - considered among the best of Italy’s world-beating produce, and this bottle from Colle dei Cipressi rocketed to the top of our list of favourites this month. Elegant, refreshing and beautifully balanced, it’s the ideal pairing for fresh fish and seafood dishes ranging from barbecued prawns to sashimi, snapper, barramundi, and fish soup with plenty of vegetables and a spritz of lemon. Chicken breast dishes are also highly recommended, as are those which put burrata or mozzarella in the spotlight. Green vegetables with pesto, simple pasta classics like aglio e olio, and couscous with nuts and herbs will also work very well indeed.
