Details
Mostly Vermentino with a splash of Pinot Grigio, Bianco is an Italian-inspired blend that is all about the warm sunny afternoons. It offers a wild fruit salad of refreshing orchard fruits, pink grapefruit and ripe Nashi pear. There's plenty of citrus lurking in the background, with a whiff of almond and fresh cut grass as well. Delicious.

There's a clue in the name - this is a collaboration between a few good mates, based in the McLaren Vale and with vineyards across South Australia. Grown from humble roots, but with a clear mission; to create expressive and drinkable wines. Long term friends and colleagues, Norm Doole, Mike Farmilo and Nick Whiteway had always dreamed of making wine together. Norm has been growing grapes and making wine in McLaren Vale and at his home vineyard in the Adelaide Hills for over 30 years. Mike Farmilo is one of Australia’s most highly awarded winemakers; having made wines that have won the Jimmy Watson Award for Best Red Wine in Australia, twice! Nick has over 20 years experience in the industry; including vintages in the Napa Valley, USA and the Douro in Portugal. This melting pot of knowledge and cumulative experience are at the heart of the business. Their wines are constantly evolving, yet always remaining true to their purpose - that is, to be enjoyed and boast the unique qualities of their region, vineyard and variety. Great stuff.

Pairing guide
With Vermentino as the hero, the Colab & Bloom Bianco shows a lovely fresh tang that will make it an ideal match to many creamy dishes, with the citrusy acidity able to cut through richness and fried things like a sabre. Whiting/bream or prawns with a creamy sauce would be ideal, as would fried whitebait (with aioli, of course). Salad with or without seafood would be a wonderful pair, with a classic caesar or a greek salad a delightful choice. One final suggestion - you'll want to serve this white wine well chilled but not too cold, or you'll miss some of the subtle fragrance.

Wine region
South Australia, Australia
South Australia is a wide and varied state when it comes to wine production. From the coastal regions of Limestone Coast and McLaren Vale, to the warmer inland valleys of Barossa and Eden, to the flats of Langhorne Creek, there's a range of terroirs and temperatures across this wide brown land. As a result, wines labelled with only South Australia can display a range of flavours! The state is probably best known for Shiraz, Grenache and Cab Sav in reds, and Riesling, Sauvignon Blanc and Chardonnay in white. Whatever your flavour, there's plenty to explore!
