Il Pinko is a serious Rosé made from estate grown Syrah in a please don’t drink me too cold kind of way. This is a wine with a lot of complexity with the aim to make everyone think differently about rosé. Firstly the wine is jam-packed with spice, herbs and savoury cherries upfront and the palate continues with silky texture, mineral like acidity and a hint of tannin. Drink it while reading some Sartre or Foucault or at the very least have the book open while drinking this.

Cobaw Ridge is one of the iconic wineries of Macedon Ranges, one of the coolest regions in Australia, both in terms of temperature and “Cool bike, bro!” Macedon Ranges is located about an hour’s drive from Melbourne and is excelling in producing some of the hottest Riesling, Chardonnay and Pinot Noir in the country. One family who has been leading the pack is the Cooper family behind Cobaw Ridge. Alan and Nelly Cooper planted vines on their property in 1985 in the early years of Macedon Ranges developing as a wine region and have become the bellwether for the region. Alan and his son Joshua are responsible for the winemaking and together they are forging a path for some of the best examples of carefully made wines going around. The vineyard has been operating as fully biodynamic since 2011 and irrigation is only used on young vines. The winemaking is a continuation of this mindset with no additions in the winery to best reflect that all important terroir.
