Details
This left-bank Bordeaux from Château Liversan is a blend of Merlot and Cabernet Sauvignon, with a splash of Cabernet Franc and Petit Verdot from 30-year-old vines. Classic blackcurrant cassis fruit, with savoury leaf, dark chocolate and light bottle-age tobacco notes, meets a smooth and velvety palate, framed by chalky tannins. From the excellent 2016 vintage, this wine is delicious now but could be cellared for another five years.
Founded in the 18th century, Château Liversan is situated in Saint-Sauveur in the Haut-Médoc in Bordeaux, and was classified as a ‘Cru Bourgeois’ in 1932. The Château owns 51 hectares of breath-taking vineyards, nestling within the wild beauty of a gravelly plateau overlooking the Pauillac vineyards. Surrounded by protected woodland which separates the estate from the prestigious appellation, the Château's vineyards are planted with Merlot, Cabernet Sauvignon and Petit Verdot. At Château Liversan, all herbicides have been eliminated, and they believe in minimal intervention while respecting plant matter, encouraging biodiversity, and using gentle winemaking techniques. They strive for the good health of their vines, their people and the environment. The limestone, fossil-rich subsoil anchors the roots firmly into the ground, producing vines as sturdy as Liversan’s aim to reveal the essence of their terroir through their wines, year after year. ‘Château Liversan is like a long, firm handshake; never crushing, but always giving time to taste and transmit the emotion found in the land and the wines.’

Pairing guide
When it comes to world-beating wine styles, there’s simply nothing quite like a Bordeaux. This classic red blend from the Haut-Médoc appellations is the ideal pairing for dishes of dark game meats, slowly braised in wine and herbs, and with rare steaks served with a punchy sauce and a mountain of frites. Wild mushrooms, truffles, roast cauliflower and potato dishes like dauphinoise are always a great option, as is roast duck, bitter greens like kale, and decadent dishes of venison with wild berries.

Wine region

Bordeaux, France
Bordeaux is a wine region located in southwestern France, known for producing some of the world's most coveted and expensive wines. The main takeaway is that Bordeaux wines are a blend of grape varieties. Sometimes called noble varieties, this includes Cabernet Sauvignon, Merlot, Cabernet Franc, Petit Verdot, Malbec and Carménère. This ‘Bordeaux blend’ style is emulated worldwide from Australia to South America!
Key regions can be divided into two areas, the Left Bank and the Right Bank. The Left Bank includes Médoc, comprised of sub-regions - Pauillac, Saint-Estèphe, and Margaux. These wines are Cabernet Sauvignon dominant with serious tannin structure for the long term. The Right Bank is known for softer wines made of Merlot. The top right-bank area is Pomerol, home to the iconic Château Pétrus with honourable mentions to Saint-Emilion and Fronsac.
