Minervois is a region esteemed for its vineyard landscapes that are perched upon a breathtaking backdrop of southern French foothills. This exciting region also boasts a rich and remarkably deep wine history. Archaeological evidence shows that viticulture here dates back to early-Roman times. The Chateau de Paraza Estate is certainly no new kid on this vineyard block. In fact, while under Louis the XIVth (14th) Chateau de Paraza served as a base during part of the building of the canal that connects the Mediterranean sea to the Atlantic Ocean. If the walls of Chateau de Paraza could talk, we know there would be a bookcase worth of colourful wine stories to tell. Jump ahead to our modern century and you'll find the close-knit Danglas family — parents and three children, Lucile, Matthieu, and Antoine — doing all the hands-on work in the vineyard and winery. They have a clear winemaking philosophy; to honour the tradition of the estate with a keen eye on sustainable agriculture. The proof of success is in the glass. The wine of Chateau de Paraza speaks a voice true to their unique terroir and the estate's rich history. There's no room for shyness in this delicious Rousanne and Grenache Blanc blend! Packed with ripe stone fruit flavours like yellow peach and apricot, you can really feel the love of the sun on this wine. There are some beautiful fresh florals here too, geranium, and even a slight kick of ginger spice. Be ready for a lavish white here. You may need two hands for this glass!

Pairing guide
This richly textured white blend is a benchmark classic from the Languedoc region. It has plenty of round and oily character and so it's no surprise that this wine is perfect for a kind of rich and creamy kind fare to suit. Crab and lobster, as is the classic French Bouillabaisse soup. You don’t need to stick with fish, though - this wine is also going to pair nicely with pates, veal, roast chicken and cream sauce, and even Indian curries like tikka masala.
