Would you look at that colour! This beautiful rosé Champagne is a shimmering red pink colour and it's one incredibly vibrant drink. It smells and tastes of strawberries, white cherries and red fruit with layer after layer of brioche and toasted almond for extra interest. Savoury, firm, yet rather joyous, this is a sublime modern fizz that is impossibly beautiful.

Périne Baillette, daughter of founder Pierre Baillette, is now the owner of this family-run Champagne house in the small village of Trois-Puits. She lives and breathes wine - no surprise really, being brought up in such an esteemed, wine-focussed part of the world. She is married to another gun Champagne maker, in Alexandre Chartogne, who also happens to make wonderful wines. With these influences, it was almost destiny for Périne to become a great maker herself! Since 2010, no pesticide have been used on the Baillette vines. She also tries to use the far machinery as little as possible, instead using giant draft horses (hers are named Tarzan and Saumur!) to till the land. Sensitive in the cellar as well as the vineyard, the wines are left to ferment naturally and then go to bottle without too much messing around. The results are superb - creamy, complex wines that show off numerous fruit flavours. Definitely worth seeking out.

With a rare combination of joyous fruit notes and a wonderfully crisp and taut palate makes this Champagne from Pierre Baillette is everything you want from a classic Champagne. As with all fizz like this, the food pairing potential is more or less endless, although we think you can ratchet up the flavour density a little more than a more delicate style. Tuna and salmon-based dishes are going to be wonderful here, as would seafood pasta made with a lighter sauce (rather than a rich tomato option). Superb with brunch options like eggs or even crepes, this will really sing with a feta or goats cheese salad and always be refreshing.
