Details
So very fresh! That's the vibe with this lovely and light-bodied Adelaide Hills bubbly, which is so refreshing that you could almost shower in it (which is not recommended. Trust us). The Chain of Ponds Sparkling smells like fresh-cut white flowers, marzipan and citrus, with a taut and terrifically fresh palate of just ripe lemony vitality.
The name comes from a former township and describes a picturesque ‘Chain of Ponds’ that used to run between sub-regions Kersbrook and the River Torrens in Prairie Adelaide Hills. Chain of Ponds winery was established in 1985 in Gumeracha, just 4km from the former Chain of Ponds township. As early adopters of the Adelaide Hills region, their first vintage was in 1988 from their 150 acres of vines at the time. Chain of Ponds continues to showcase the unique terroir of this Australian alpine region; the purest examples come from their Single Vineyard Series and estate range, entirely sourced from the Hills. Since 2004, the present owners have sourced fruit from further afield to include the accessible Novello Range. Still, Chain of Ponds plays to its strengths by offering accessibly priced wines that show the potential of cool-climate Adelaide Hills.

Pairing guide
We love a good sparkling wine here at Good Pair Days, and we know that you do too. We’ve no doubt you’ll adore this gorgeously crisp bottle of bubbly from Chain of Ponds, which pairs brilliantly with more dishes and ingredients than you could shake a stick at. Light canapes, deep-fried street food, comforting favourites like grilled sausages, loaded fries and pizza, parmesan chicken breasts, arancini, barbecued prawns… the list just goes on and on! It’s excellent with veggie fritters, roast chicken drumsticks and all kinds of cheese, and will also work very well with spicy crispy noodles and shucked oysters, too.

Wine region

Adelaide Hills, Australia
The Adelaide Hills wine region, located in South Australia's Mount Lofty Ranges
of South Australia is characterised by its high altitude, cool climate, and diverse soils, which all contribute to the unique terroir that produces elegant, complex, and expressive wines. The region's altitude ranges from 400 to 700 meters above sea level, creating a cooler climate than other wine regions in South Australia. The cool temperatures slow down the ripening process of the grapes, resulting in wines with high acidity, delicate aromatics, and elegant flavours. Top sub-regions are Lenswood, Piccadilly Valley, and Basket Range, each with unique microclimates and diverse soil types that produce singular wine styles, the highlights are Sauvignon Blanc, Chardonnay, Pinot Noir, Shiraz and a whole lot more!
