What a wine - dry, unfortified (from Jerez!) and blisteringly complex and enjoyable. It comes from the coastal single vineyard of Aelina, and is named Las Mercedes. It is deep, dry, and soft and it lays out easily in the mouth, with a touch of spiced hay. Flavours of butter, wildgrasses, shortbread, nettle and white peach...savoury, salty and delicious.
Enter the world of Callejuela, where the Blanco brothers, Pepe and Paco, craft exceptional Palomino wines in the heart of Marco de Jerez. Founded by their father, Francisco Blanco Martínez, in 1980, the winery has since become a beacon of traditional winemaking practices. With 28 hectares spread across four pagos (vineyard sites), including holdings in Sanlúcar de Barrameda and Jerez, Callejuela is deeply rooted in the region's viticultural heritage. Embracing a philosophy of late harvests to ensure optimal grape quality, the Blancos prioritise preserving the pure expression of Palomino grapes. This single vineyard Palomino wine is a real treat for the taste buds, and one we’re sure you’re going to fall in love with much the same way we did. All that dryness and slight oxidative character make it a brilliant pairing for pairing with mild and creamy cheeses, salads of fresh, marinated or roasted vegetables, artichoke hearts and roast yellow capsicum, and especially with sushi, sashimi and ceviche creations. Simple chicken dishes, tempura prawns and tofu, green olive tapenade and Spanish-style ham will also work wonders with this wine.
