Details
This is a nice, freeflowing sparkling that will be sure to kickstart any party. Crystal clear in the glass, with lemon zest and some floral lift along with a hint of strawberry sherbert. There is some toasty complexity to offset the fruit driven structure, which will make this fizz a sure winner.
We love a rising star here at Good Pair Days, and Byron & Harold definitely fit the bill when it comes to rapid and blazing ascendency. This WA winery has already made some serious waves on the scene, with their earliest vintages back in 2015 picking up accolades, awards, and dedicated fans right across the region and beyond. While there’s doubtlessly been no shortage of blood, sweat, mud, and tears since then, founders Paul Byron and Harold Dunning have made the whole thing look impressively easy, continuing to produce fantastic and characterful wines that really do live up to the hype. Focusing exclusively on the coolest of cool climate regions, primarily in and around Margaret River, Byron & Harold work with fruit that exudes the utmost elegance, coupled with the refreshing, laid-back drinkability we all love to settle down with at the end of the day. With a superb portfolio of delicious wines, each with a character and flavour profile as memorable as their names, Byron & Harold’s star continues to rise… and we’ll drink to that!

Pairing guide
With its intensity and freshness, this easygoing sparkling is a stunning choice for pairing with all kinds of wonderful ingredients. We love this wine with deep-fried veggie dishes as the acidity really cuts through the fried edges; plus, this wine is a great contrast to rich salads and indulgent tofu or seitan creations. However, it’s every bit as good with a baked camembert or veggie croquetas and will work wonders with a big plate of chips, too!
