Made from local variety Zelen, indigenous to Slovenia, the juice macerates for 3 days with the grape skins, before aging in concrete for a short time. Very aromatic, it reminds us of Viognier, but fresher. Amber in colour, with a slight twist of tannin on the finish. Gastronomic and delicious.

Slovenia certainly isn't front and centre on the fine wine map, but to be honest , there's no reason it shouldn't be. The main wine regions aren't far from the Italian border, are situated on diverse and complex soil types, at moderate altitudes with a cool climate They've got all the necessary parts for fine wine production. Throw in indigenous grape varieties and a wine history of more than 500 years and it's almost strange that we DON'T know Slovenian wine better. Burja is one of the leading producers in the entire country, led by winemaker and scholar Primoz Lavrencic. His focus on the local varieties and the 'old' way of doing things has brought him a lot of praise over the years. His wines are made organically and are crammed with character and flavour. He is a true original, shining a light on varieties and regions that deserve their time in the sun. Zelen is such an interesting, unusual grape, and when made by master winemaker Primoz Lavrencic, it takes on another dimension of texture and flavour. You can go all out her with flame-grilled fish with spicy avocado and peanut salad, or maybe Creole-style prawns or jambalya. The spice will be tamed by the wine, and the texture will really offset the seafood. A more classic match however would be a little more easy-going....what we know as Kransky is in fact a Slovenian invention - known as Kranjska sausage. Serve on a white bun with mustard and pickles for an authentic match!

The Vipava Valley wine region is in western Slovenia, between the Adriatic Sea and the Julian Alps. The valley's climate is heavily influenced by orientation and its proximity to the sea and the mountains. This microclimate, combined with the region's limestone and sandstone soils, produces vivacious wines that are fresh and fruity character, that retain loads of acidity and minerality. The top wine styles produced in Vipava Valley include dry white wines made from local grape varieties such as Rebula and Zelen, as well as international varieties such as Chardonnay and Sauvignon Blanc.
