Details
Welcome to the far reaches of the wine universe! Ever heard of the grape variety Crystal? Us neither... until now. Good luck trying to find another one anywhere. This is a unique wine to say the least! Made without too much mucking around, this is cloudy and gently sparkling in glass. Unfiltered, so it has lots of texture. Think lots of orchard fruits, quince, with a bit of apple blossom also. Refreshing acidity with a frothy mousse with a clean finish.
With the wave of renaissance Australian wine is currently enjoying Brad Hickey found himself in McLaren Vale capturing the zeitgeist. With years of wine experience in restaurants in New York, Brad Hickey created Brash Higgins with Nicole Thorpe. The wines offer a spectrum of styles, from conventional to full blown experimental. Not afraid to try new things (or old things) such as working with aromatic grapes such as Zibibbo and fermenting in clay vessels. Much of the fruit for the reds comes of their own Omensetter vineyard, which was planted in 1997 and certified organic in 2017. Form this site, which is clay over limestone, they craft Shiraz, Cabernet and Nero d’Avola. The addition of the white grape, Crystal, took place in 2012 to the Omensetter. With a curious back story that traces the grapes history back to China and Greece it had historically been used for “home brew” grappa production in McLaren Vale. Brad crafts this grape into a sparkling wine.

Pairing guide
Brash Higgins is a winery known for their inventiveness and idiosyncratic approaches, this sparkler - which uses the mysterious ‘Crystal’ grape varietal blended with Chenin Blanc - is the perfect embodiment of that. Bursting with elegant bubbles, and displaying flavours of green apple, pear, honey, and bread, it’s the ideal picnic wine, perfect for pairing with light salads, chips, and chicken wings. However, it’s also going to be great with pork dishes cooked with fruits, fritters, Spanish tortilla, and chicken tagine!
