The palate is light and snappy, with flavours of sour cherry and raspberry. The tannins are soft and ever so silky, yet the wine is held together by a lovely drying, savoury acidity. Overall a fruitful, delicate wine with a balancing savoury quality, best enjoyed in its youth.

The result is a stunning portfolio of wines, which are not only helping to define what Adelaide Hills wines can be in the 21st century, but which are also rewriting the rulebook on which grape varietals work best in this exciting collection of terroirs. Bondar is the brainchild of Andre Bondar, who spent many of his younger years trotting the globe, figuring out what he liked when it came to wines, and checking out how things were done in some of the best wine locations on earth. He worked as a winemaker in both McLaren Vale and France’s Rhone Valley, and while the wines he makes today have clear influences from both sides of the planet, he and his winemaking family give his collection of bottles a character that is entirely their own.

GSM is one of those timeless French blends that just never falls out of fashion, and never fails to satisfy the senses. Perfectly balanced, deliciously juicy, and ideal for food pairing, this bottle from Bondar definitely lives up to the hype. We reckon it’s best to stick to the flavours of the Mediterranean with this wine - anything with aromatic herbs, especially rosemary and sage, is going to do the job nicely. It’s a fabulous wine for pairing with cheaper cuts of pork and beef, and loves roast chicken and duck, red capsicum, and ingredients like olives and capers.
