Since the 9th-century Christian pilgrims travelled across northern Spain to Santiago de Compostela, which was believed to be the final resting place of Saint James. This cultural landmark is situated in Galicia — home to Bodegas Milenium and some of Spain's most interesting history, food and wine, thanks especially to the Celtic influence of early settlers in the region. Despite its rich history, Galicia has been flying under the radar of international drinkers and has only been gaining popularity in recent years specifically with its wines produced in the Rías Baixas region. The mild temperatures, coastal influence from the Atlantic, and generous precipitation here have made this home to some of Spain’s (and arguably the world's!) most incredibly refreshing white wines — Albariño. When it comes to white wines perfectly matched with a wide array of fish and shellfish dishes, we reckon that Albariño is the undisputed king. White fish, dressed with fresh herbs and a spritz of lemon, is always going to be a glorious pairing for this refreshing wine, and it’s just as good with everything from scallops to clams, and from meaty sea fish to battered calamari. Leafy green salads, again with that citrus twist, will work very nicely, and any savoury dish that brings tropical fruits into the recipe is also likely to hit the spot.

Rías Baixas, Spain
Rías Baixas is a region in northwestern Spain that is responsible for Spain's greatest success story when it comes to white wine: Albariño. The region is broken down into a number of sub-zones, each with their own unique influence on Albariño. However, they all largely share one common characteristic: proximity to the Atlantic. In fact, some of these coastal vineyards are so close to the ocean that the salty sea air quite literally settles on the fruit, sometimes giving the wines a wonderful saline, salty tang. Whilst this is quite a wet region, there is plenty of sunshine for ripening grapes and many of the vineyards are planted on granitic soils, offering up firm, fresh acidity to these wines. Albariño is commonly known for its refreshing character with notes of crisp apples and citrus, but there is plenty of experimentation at play in the region and it's not hard to find examples from more experimental winemakers.
