Sue says that ants have five noses in their antennae, detecting separate smells, but you only need one nose to recognise this Coonawarra Cabernet! It's made simply but tastes complex. Lots of dark fruit, some liquorice and vanilla, a touch of cocoa and bay leaf, and a polished finish that leaves you wanting another glass.

Bellwether is the brainchild of winemaker, gardener, baker, music lover and all round general bon vivant Sue Bell. The winery is to be found at the historic 1868 Glen Roy Shearing Shed in Coonawarra. Here, Sue focusses on fermenting special parcels of fruit and making her own unique wines. In the traditional, some may say 'old fashioned' wine community of Coonawarra, Sue is a bolt of vitality. Bell has worked for some of the smallest and biggest wine companies in the world, with experience in most South Australian regions, Victoria, New South Wales, Tasmania and vintages in California and Bordeaux. Her wines display a lighter touch and more vibrant fruit than is the local South Aussie norm, and yet are not 'weird' wines in any way...they are simply one enlightened individual's take on some great grapes....that happen to be delicious!

With its boisterous character and deep fruit flavours, this wine is the perfect match for powerfully-flavoured and slightly decadent dishes. A good quality beef steak, served with all the trimmings and a piquant sauce, is the most obvious pairing to go for. However, it’s also going to be divine with rich eggplant dishes, strong mature cheeses like Cheddar or Gorgonzola, wild mushroom dishes, roast lamb, homemade burgers, and dark meats like venison or boar.

Coonawarra, Australia
Coonawarra is in the southeastern corner of South Australia, located in the Limestone Coast of South Australia, about 300 km southeast of Adelaide. The region experiences a maritime influence due to the upwelling of cold ocean currents. The main varieties grown in the region are Cabernet Sauvignon, Shiraz, Merlot, and Chardonnay. Here you can find the legendary terra rossa soil, with its thin iron-oxide-based topsoil over limestone, giving it that unmistakable reddish hue. This soil type is believed to be a major contributing factor to the robust character of the wines. The Coonawarra wine region stretches about 15 km, with more than 50 wineries. Penfolds, Wynns, Balnaves, Rymil and Katnook Estate are among the most notable and historic in the region. Each of them produces highly sought Cabernet Sauvignon that is medium to full-bodied, with brood notes of cassis, blackberry, plum and dark cherry flavours. Structured with firm but plush tannins, the very best of them cellar gracefully for decades.
