With its beautifully lithe and fragrant peppery mode, this graceful and proudly cool and spicy red is a quite particular wine to pair with. We think this will work wonderfully with Chinese duck, pork and other noodle dishes where the spice and subtle fruits can work as a grand contrast to salty, umami-laden foods. Cheese and charcuterie will be wonderful pairs here too, especially as it allows that natural spice in the wine to rise to the surface, and all you need is to be careful not to add too much chilli (or it will swamp this wine).
