It's an absolutely divine drink, but gee, this sweet wine from Beautiful Isle requires so much work in the winery! Cynthea and David plunge this wine with dry ice (which basically means sticking big dry ice blocks into the fermenting wine by hand). After a few days, they then take the must (that's the juice mix) and then freeze it to further concentrate the flavours. You end up with a pretty evocative drink and a wildly aromatic ride.

A unique sweet wine like this is a marvel to enjoy on its own, especially when it's as luscious and exotically fragrant as this wine. We really like this with a range of desserts, especially things with creamy contrasts like trifle or creme caramel, with fresh fruit and pastries also very welcome. Naturally, this is also an excellent cheese wine, especially with powerful blue or washed rind styles, where the sweetness is a great counterpoint to the strong mould. Finally, don't miss the excuse to bring out all your dried fruits as well, where this aromatic dessert wine will sing.
