This gorgeous amber-hued blend of skin-contact Sauvignon Blanc and Pinot Gris is bursting with appeal; flavours of apricot jam, orange blossom, oyster shell and wet steel, with a little harmless natural sediment in the bottle. A still wine bottled under crown seal, it’s juicy, creamy and easy to drink, with a little tannin to finish. Perfect for a balmy night, with the heating on full!

Dan Simmons could be called something of a triple threat; sommelier turned distributor and most recently small wine producer, he has had a wide and varied exposure to wine at every level. An English boy who ‘done good’ in Sydney, he ran the wine lists in several funky Bondi haunts before turning the tables (literally!), and started his own wine distribution company, Grafted Wines. With all this experience tasting wine (and drinking it, let’s face it) Dan felt the time was right to dabble in the dark arts of winemaking himself, so he teamed up with buddy James Becker, from M&J Becker Wines in the Hunter Valley, to produce these fun, edgy and ultimately smashable wines from regional areas such as New England and Hilltops in NSW. Their focus is on producing wines using minimal intervention, taking cues from natural wine: organic vineyards, wild yeast fermentation, skin contact for white wines, and no filtration, to make wines of joy and excitement. Bottled under crown seal for that Gen Y appeal, but don't let them have all the fun!

Skin contact wine may no longer seem like such a radical new arrival in 2022, but labels like Balmy Nights certainly know how to keep their audience on the edges of their seats. This beautiful Orange wine is ideal for food pairing explorations, and will work especially well with Greek and Middle Eastern lamb dishes, especially if served with lemon and feta, as well as with tabbouleh salad or similar creations of couscous, quinoa and all the rest. Roasted root vegetables, cauliflower soup, and anything featuring walnuts and almonds will also hit the spot perfectly.
