Details
Tom and the Mullany family have always wanted to make a serious bubbly, and this Blanc de Blancs has quite a fancy feel. Made from Chardonnay grapes from the family vineyard at 520m altitude, it's crisp and refreshing, with layers of toasty, biscuity richness that contrast nicely.
The Ballinaclash story is as much about fruit as it is wine. In 1965, Michael and Bernie Mullany started a cherry and stonefruit orchard in the fertile hills around Young, central NSW. Grapes didn't come into the equation until '97, when the next generation of Mullany's took over and planted the first vines. Now, the Ballinaclash property grows 14 different cherry cultivars, 13 grape varieties, and a huge range of stone fruit, complete with a fun pick-your-own fruit business that runs on the weekends. Historically, the Ballinaclash grapes have gone to other winemakers, including a group of top-shelf Canberra wineries, such as Clonakilla, Nick O'Leary, and Collector Wines, but the Mullany fam also have Orange-based winemaker Chris Derez making a small amount of frankly delicious wines that we really like.

Pairing guide
This layered fizz from the Hilltops is quite the social butterfly thanks to that contrast of tang and creaminess, pairing brilliantly with everything from elegant oysters and smoked salmon to decadent white meat or veggie-heavy dinners. It’s just as comfortable at the end of the night alongside fruit-based desserts or salted caramel treats, but for a real pro-tip, try it with deep-fried favourites. There’s a certain magic in the combo of sparkling wine with crispy fried chicken and French fries that we simply can’t get enough of!
