The Prosecco Rosé designation is a new one in Italy, but has already produced a number of brilliant wines. Here, the traditional Glera variety is blended with Pinot Noir to create a fruity yet dry wine, full of character. Peach, raspberry and various citrus fruits combine with yeast and zingy acidity to harmoniously create a fresh, fantastic bottle of fizz.

Babo is run by Justin Bubb, who cut his teeth in Barolo and Chianti, and picked up the local love for superb, complex red wines, packed with character and expression. After living in Chianti for several years, he now makes wine from there as well as Sicily and the Veneto. Today, Babo is run by Justin and his two best mates, who have sourced the finest fruit from vineyards in these regions, and continue to impress year on year with the quality and authenticity of their produce. Is it possible to not get excited by pink bubbles? We think not - and this gorgeous rosé Prosecco from the ever-reliable Babo definitely knows how to get us quivering in anticipation. As you might expect, it’s a joy of a wine to pair with food; it’s going to be absolutely delicious at a beach barbecue loaded high with oily fish like mackerel and sardines, and will work so well with clams and mussels, and pretty much anything that comes in a shell and tastes fantastic. Charcuterie is always a good shout with a rosé fizz, as is raw red meat like tartare and carpaccio. If all else fails, pair it up with some great olives and your favourite cheeses - you can’t go wrong!
