Vin Santo is an ancient wine style made from grapes that are air-dried before fermentation and then matured in barrels for many years. Nearly every winemaking country has a different riff on this style, from Georgia to Italy, and it has a very proud history on Santorini. Argyros' Vin Santo is a blend of 80% Assyrtiko and 20% Aidani grapes that are dried for 10 days and matured for three years in cement tank and a further four years in barrel (that's why it's called first release - there is another release that spends 16 years in barrel!). Seriously, this is one of the most incredibly luscious, rich and mouthfilling wines you will ever try.
Estate Argyros' history is the history of winemaking on Santorini. The largest vineyard owner with the oldest vines, this venerable, still family-run estate is as much a lifelong passion project as a wine business. On an island where tourism is forever chipping away at vineyard land, the Argyros aim to preserve the ancient 'Koulori' bush vines and indigenous grapes that this stunning Greek island is famous for. It's an institution and a winery worth shouting about (from your white-walled Santorini villa). Unquestionably, Assyrtiko is the king at Argyros, especially when you have 200-year-old vineyards to work with. Everything is farmed organically, and work is done by hand or with horse and plough, the timelessness of this property is inescapable. This amazing and quite ancient wine really deserves its own place in the world, with its figgy, caramelised, bitter orange and treacle flavours that are outrageously concentrated. Cheese is the obvious goto with this wine, and especially strongly flavoured blue, hard cheddar or even Greek Kefalotyri if you can get it. Dried fruit, anything caramelised, and smoked meats will work wonderfully here and its one of the very very few wines that will work well with chocolate and caramel.
