Easily the most provocative wine in the Aptitude Theory lineup, this is an unusual blend of Riesling and Cortese, with both grapes spending time gathering complexity and tang on their skins. This is a tart, nutty, and honeyed white that at first glance seems round and creamy, but then along comes the tang, with a crunchy super clean finish to balance things out. It builds on you, and you can't help but admire the clever textural complexity of this interesting wine.

Aptitude Wines is the new label of Greg Clack, the Chain of Ponds winemaker who has his fingers in all sorts of pies all over the Adelaide Hills. In particular, Greg loves the diversity the Hills offers, with sites that can make full-bodied reds and other spots that can make ultra-cool, refined fresh white wines. This Aptitude label is founded on 'the principle of precision and restraint', which basically translates into a lineup of wines that lean towards refinement and delicacy - and gee, they're impressive drinks. What's even more entertaining is the diversity: Greg has focused on Pinot Noir and Chardonnay, which are usual for the Hills, but also on Nebbiolo and a range of Italian varieties. His philosophy is a respect for classic European traditions, adapted thoughtfully to Australian conditions. To get into the winemaking nitty-gritty, it translates to wild-yeast fermentation, restrained oak, and a big focus on celebrating different vineyard expressions (and the joy of the Adelaide Hills).

A unique blend and a unique orange wine. That's the gist of this fascinating Aptitude release, which really demands you dive into it. We really think this might be the best cheese wine we've had in quite a while, and the extra-juicy vanilla-honey fruit highlight is a welcome contrast to a creamy, soft mould cheese like a camembert or a particularly tangy chevre. Indeed, goat's cheese is a wonder here, especially when paired with fruit and honey. Pumpkin, potatoes and couscous are all going to work nicely as a backbone for the layers of flavour in this Aptitude wine too. You know what? Just crack the bottle open and see what sticks (and don't serve it too cold).
