Dolcetto and Sangiovese aren't your usual grape mates, as historically they're grown in different ends of northern Italy. Which makes this unconventional red even more entertaining. It's a lovely savoury red, too, with beautiful, gentle red-cherry fruit in a style more like Pinot Noir, if you know your grapes. What a pretty wine this is - unforced, crunchy, light bodied and so refreshing. Lovely stuff.
Aptitude Wines is the new label of Greg Clack, the Chain of Ponds winemaker who has his fingers in all sorts of pies all over the Adelaide Hills. In particular, Greg loves the diversity the Hills offers, with sites that can make full-bodied reds and other spots that can make ultra-cool, refined fresh white wines. This Aptitude label is founded on 'the principle of precision and restraint', which basically translates into a lineup of wines that lean towards refinement and delicacy - and gee, they're impressive drinks. What's even more entertaining is the diversity: Greg has focused on Pinot Noir and Chardonnay, which are usual for the Hills, but also on Nebbiolo and a range of Italian varieties. His philosophy is a respect for classic European traditions, adapted thoughtfully to Australian conditions. To get into the winemaking nitty-gritty, it translates to wild-yeast fermentation, restrained oak, and a big focus on celebrating different vineyard expressions (and the joy of the Adelaide Hills).

Still, this very pretty Dolcetto blend really highlights how the best of Italian red grapes can make genuinely refreshing red wines. We love this Dolcetto blend with pizza. From margherita to fungi, the pizza/Aptitude combo is epic. Picking off some of the pizza elements, we absolutely love this red with cured meat and cured vegetables, salty cheeses, artichokes and roasted capsicum, with the only caveat that you need to be wary of spicy or strong dishes as they will overtake this light red wine. Oh, and if the day is too hot, don't miss giving this red a little chill as well!
