Details
The secret to this wine's pure appley brilliance is the King Valley Prosecco grapes, picked at night so they reach the winery cold and fresh at first light. You can taste that in the glass: green apple and pear, a lift of white flowers, a twist of lemon. It's light, airy, and effortlessly energetic with that cool natural acidity that keeps everything humming through to a clean, crisp, dry finish.

All Saints Estate is a family-owned winery established in 1864 on the banks of the mighty Murray River in Wahgunyah, northeast Victoria. One of Australia's oldest wineries, it is filled with historic treasures like ancient barrels and winemaking equipment, and its walls are strewn with medals and trophies from years gone by. Eliza, Angela, and Nicholas Brown are the current guardians of this historic icon - three siblings, united by blood and a love of wine. They come from a famous wine family - the Browns, of which their father Peter was one of the original Brown Brothers. So, the pull of the vines was always going to be strong. Today, they are proud to be custodians of this land and excited at the potential in this treasured corner of north-eastern Victoria. Their wines are regionally distinctive, handcrafted and full of character. Not only is there a broad suite of varieties from across their vineyards, but they continually add to the business through the development of a restaurant, wine bar and accommodation. A family business in the very best sense, All Saints is a special part of Australia's vinous history.

Pairing guide
This is a before-dinner bottle really, with that fresh-picked liveliness guaranteed to inject some life into your evening. Set out sardines on toast, prosciutto draped over melon, and a soft goat's cheese with caramelised onion. The wine is too delicate to take on anything heavy, but its acidity and fine bubbles brighten salty, oily little bites like nothing else. Croquetas straight from the pan work a treat too, as would vegetables that include that little fried element too. Oh, and make sure you keep this wine properly cold for best effect!
