Story
For NSW Central Coast-based home brewer Chris Benson and schoolmate Adam Klasterka, having their own brewery seemed like every beer-lover's pipe dream. So when they first opened the Six String Brewing doors in 2010 it seemed like the stars had aligned. Little did they know that due to some local bureaucracy, it would be a full three years before they could start selling their first brews...
Fast forward more than a decade, and the two are proud to have stuck at it. Music plays a big part at Six Strings (Chris plays the six-string bass guitar) with their brewpub bar also doubling as a stage along one wall of the brewery in suburban Erina. However, it's what the boys call their 'Amplified Ales' that are the real show here, with Pale Ale & IPA to the fore, along with a cavalcade of new and interesting beers, ciders and so much more.
Seriously purple, this take on a creaming soda is a fun twist on the classic Filipino Ube (pronounced oo-bay) flavour. Ube always has this nutty, vanilla richness, and here it adds juiciness and is balanced with a cool tart finish. For anyone who's tried traditional ube desserts, you're going to love this, and for everyone else, you're going to love this!

PAIRING GUIDE
It's fizzy, it's fun, and it's purple. What's not to like? This sweet and tart drink is a winner all by itself on a hot arvo, with that creamy tangy feel so very very refreshing. It's also a superstar with hot-and-spicy wings, the famous 'Bicol Express' spicy Filipino pork dish, and crispy tofu sisig (a hot Filipino tofu option). Most importantly, you'll want to drink this hard creaming soda absolutely ice cold - a little freezer time will go a long, long way.
