Story
Like so many brewers, Mike Clarke started off brewing in his garage. Initially, as an IT professional, making beer was just a fun hobby. But the hobby grew to the point when Mike had nine fridges and four beer taps (much to wife Katie's dismay) bursting out of his garage and into the house.
That quickly pushed Mike to make beer a full-time gig with the name of Sauce Brewing. He went all-in too, setting up a state-of-the-art brewery (complete with lights that adjust to the conditions and a fully automated brewhouse) in Marrickville, aka the beer heart of Sydney.
With so many great local brewpub options to choose from in Sydney's inner west, it feels only right that the fitout, which was completed in 2017, went just as large, with a glorious astro-turfed beer garden and an array of taps with a rotating collection of ever-interesting brews.
Since then, Sauce has earned a reputation for dark beers, sours and more, with polished brews that embrace diversity without ever feeling too freaky for deliciousness.
Meanwhile, Mike named his cats after hops, and now, for the first time ever, he has made two beers after cats (and we're the first in the world to get to taste them)!
Cashmere Crush taps into a full kitchen sink of flavours and ingredients to make for a delicious beer, including using oats and wheat to give some hazy creaminess, plus Cashmere and Krush hops to give a juicy, hoppy, flavour profile.
Super aromatic and nicely mouthfilling, this is such a delicious, subtly intense, and well-made beer, with just the right amount of punch to balance out the slight haziness. Even the fussiest of cats can appreciate this!

PAIRING GUIDE
The team at Marrickville’s Sauce Brewing have scored an absolute winner with this crisp and hoppy IPA, which is sure to delight the senses of any serious craft ale fan and become a brand new favourite. Utterly refreshing, we reckon this beer is best served alongside spicy homemade dishes that pack a real hit of chilli - something like a pork vindaloo, Chinese-style fish with crispy chilli or a Korean kimchi stew would be especially good with this one. Roast ham or other saltier meats would also work very well, and we also loved it with a big plate of cheesy nachos or some loaded fries and ribs.
