Story

Fifty years ago, in a move that can only be described as a beautiful stroke of genius (or perhaps just a thirst for the good stuff), Jean Boyer decided that France was tragically lacking in Scottish whisky. So, he launched an artisanal whisky company importing the good stuff directly from the best Scotch distilleries, including Bowmore, Bruichladdich, and Glenturret, becoming a big name in whisky along the way.

More recently, Jean Boyer's descendants have evolved the business to make whisky, pastis and an array of spirits under their own steam. Most importantly, the whisky focus has evolved to now buy casks direct from Scottish distilleries to be bottled in France.

This whisky is a fascinating example of the endpoint of this process - Cawdor Springs is a cheeky pseudonym for a famous Scotch whisky house who don't want to be seen selling whisky casks to anyone.

Warming and utterly decadent, this mature whisky is a welcome option in any drinks cabinet, serving beautifully as a perfect late-night digestif. While it’s just itching to be served neat in a proper glass, this smooth and vanilla-etched whisky shines when paired with fruit desserts. Think beyond simple dried fruits and hard cheeses (though dried peaches and strong cheddar are still brilliant!) to warm apple crumble or caramelised pears. Interestingly, it will also work nicely with Indian curries and tagine, with the lightly smoky barrel character a great contrast to a mild curry.
