With the motto of 'In Hops We Trust', is it any wonder that Hop Nation would make a range of full-flavoured beers?

But there's more to the Hop Nation story than just big beers. Good mates Sam Hambour and Duncan Gibson are also winemakers, crafting delicious lo-fi drinks under the Site Wine label and making wine everywhere from Barolo to the Okanagan Valley.

There's a crossover with their winemaking focus on beer as well, including some fascinating barrel-matured sours. The lo-fi approach from beer to wine remains the same, with a big focus on using natural ingredients and an emphasis on letting those flavours shine with no pasteurisation and minimal filtration.

When the Hop Nation boys decided they wanted to make a classic German style Pilsner (or Pilsener to use the classic spelling), they went all in, using a 'Floor Malted' Bohemian Pilsner Malt (which is an ancient method where the grains are allowed to malt on the floor of a room), partnered with classic German hops and then an extended eight week lagering. The result is incredibly refreshing, with the lightly floral trademark of a great European Pilsner - no wonder it was voted Australia's most popular Pilsner for the past two years!

We love a good European-style pilsner here at Good Pair Days, and they don’t come much more refreshing and satisfying than this stunner from Melbourne’s Hop Nation. All that crisp character makes it a brilliant food pairing option - we loved it with breaded white meat dishes like Wiener schnitzel and chicken goujons and chips, and it’s equally good with potato-based dishes, baked rice classics, and lightly spiced curries and sides like Bombay potatoes, butter chicken and gobi aloo. Nice!
