Story
The Dark Matter story started with a question. What if you set up a rum distillery... in Scotland?
This was a wild idea for brothers Jim and John Ewen, and it didn't seem to have much support. But they did it anyway, founding Scotland's first rum distillery in 2015. From the start, the brothers wanted to make something unique in their small (but perfectly formed) Dark Matter distillery in Aberdeenshire and set about scouring the globe for ingredients.
Flash forward a few years, and with the help of ex-distiller from Berkshire Mountain Distillery in the US, Cory Mason, Dark Matter boasts a tight range of simply brilliant rum (and rum liqueurs).
This dark rum liqueur combines intense Arabica coffee and toasted cocoa seeds with a warming dash of Aji chilli pepper over Dark Matter's signature rum base. Far from a standard espresso mix, its velvety palate balances richness and heat perfectly. Serve it over ice or use it to propel your next espresso martini to stratospheric heights.

PAIRING GUIDE
Obviously, the main form of this is as the backbone of a truly epic espresso martini as we mentioned above, but this wonderful dark liqueur is also a superstar with richness and luscious chocolate and coffee flavours. Cake, tiramisu and other chocolatey baked goods are a first port of call, but we also like this with strong cheeses and even spicy pasta.
