Story
Dangerous Ales is the beer project of Damien Martin, with these delicious brews crafted out of a small brewery in the Milton Hotel on the NSW South Coast. Damien is a bit of a legend of Milton, as he also co-owns the hotel and is the head chef of the Good Food Guide Chef Hat-winning restaurant (in his spare time).
A South Coast local, Damien grew up riding the crazy waves and developed a deep love for all things wild - from flavours to food and fermentation.
Just quietly, Martin has a wildly impressive food background, including training in Gordon Ramsay's kitchen in London and working at renowned establishments like Sydney's Quay and Morzine in the French Alps. However, his time at Margaret River's Vasse Felix winery which sparked his fascination with fermentation.
The Dangerous Ales releases are uniformly interesting, small-batch (our allocation was brewed specially for Good Pair Days) beers of different textures and flavours that we really like.
It's taken months to get there, but what a giant pleasure it is to unveil this collab beer that we have worked on with the Dangerous Ales crew (and just in time for Oktoberfest too).
Helles is an über classic style of German Lager that is about as pure as beer gets, and this is one extra crisp drink. It's a Euro riff on the gold medal-winning Dangerous Ales Crispy Boi Lager with a proud Aussie accent but German sensibilities. Made exclusively with very traditional Saaz hops and deliberately 'lagered' (a process of maturing beer cold in tank or barrel to make it even more clear and pure), this floral, light and slightly earthy beer is one of the most refreshing beers you will try, bar none.

PAIRING GUIDE
Taking your cue from the Germans when crafting a characterful lager is never a bad idea, and this homage to Bavaria's legendary beer scene ticks all the right boxes as far as we’re concerned! We loved this lager with grilled white fish, potato salad, vegetable pilaf and other milder rice dishes, and especially with cheesy pasta or gnocchi creations. Pork chops with apple or a fruity gravy will always work well with a beer like this one, and it’s also excellent with spicy chicken wings, homemade burgers and Tex-Mex favourites like fajitas and enchiladas.
