Story
The name gives it away. Dad & Dave's is indeed run by Dad (John) and Dave, who decided in 2011 to give the whole brewery thing a go, going on to set up their own brewery in the Sydney beer hotspot of Brookvale. Over the years, this has become a true family affair, now run by Dad, Dave, Mum, Jess, Scott and James with any (or all) of them typically found pouring beers on a busy Saturday afternoon.
Interestingly, Dad & Dave's started largely because John & Dave wanted to save some money on beer. After early batches sold through like hotcakes to friends and family, they decided to go all in, jointly enrolling in a brewing degree to level up their skills.
In Brookvale (known locally as 'Brewvale'), Dad & Dave's provides a point of difference too, with a range of sesssionable beers that pivots away from just Pale Ales and Lagers into English and Belgian-style ales, single-hop IPAs, unique sours, and all sorts of barrel-aged oddities.
The dog-friendly Dad & Dave's brewup has quite the local following too, with live music on weekends and most famously, what was voted as Australia's best burgers (as voted by an Opentable poll in 2022).
This Belgian IPA is a great example of the style that Dad & Dave have become known for - it's a Belgian India Pale Ale, which means a beer that has the hoppy punch of but all the spiciness that comes with Belgian ale yeasts (in this case a Saison yeast, which delivers notes of cloves). The result is something that has the aromatics and freshness of hop-forward modern beer, but with an unquestioned soft spiciness too.

Absolutely bursting with powerful flavours and a seriously satisfying depth, it’s a beautiful and lovingly-crafted ale that never fails to hit the spot. When it comes to food pairing, you can keep this classic with Belgian-inspired dishes like mussels and fries, or discover the joy of matching it with surf ‘n’ turf dishes or seafood pasta. It’s also excellent with butter chicken or gobi aloo (or any vegetarian Indian curry, to be honest), and will also work a treat with fried rice and noodle dishes, too.
