Story
Animus Distillery was founded in 2015 by four friends with a shared passion for producing world-class spirits. From the trendy inner-north suburbs of Melbourne to a newer, bigger distillery in Kyneton, in Central Victoria, their journey has been one of exploration of flavour and the pursuit of excellence in Australian distilling. Capturing the soul of the freshest ingredients, with a focus on local, is central to the production philosophy.
The key here is the 100% Australian grain spirit, triple-filtered using a custom gravity-fed carbon filter system, to provide the purest base for capturing the essence of the botanicals. Many of these are grown on the property, and a vapour-pressed production approach is used for distillation, capturing the highest quality aroma and flavour compounds. Whilst labour-intensive, this approach balances each element with the sensibility of a fine chef to ensure the highest quality. Did we mention they're also ecologically sustainable? A brilliant operation all round.
The test pressing series is Animus' ultra-small-batch program, with this gin just 200 bottles in total. This release is loaded with more botanicals than any other, with an ingredient list that includes 'ruby grapefruit zest, lemon scented gum and lemon myrtle (for zing), roasted wattle seed and macadamia nuts (for toast and body), anise myrtle, peppermint gum and native oregano (for fragrance), and pink peppercorn and mountain pepper leaf (for warmth)'. Oh yes there is a lot going on here, and the result is a warming, powerfully aromatic gin of real punch that is a real force. Love gin? This is a go-to!

PAIRING GUIDE
This unique gin is such a charismatic drink that it really demands a whole different focus. The elevated botanicals and warm alcohol make this a bit of a gateway drink that works especially well with highly aromatic Asian dishes (and with sweeter styles of tonic), as the tangy/sweet/fragrant flavour axis works such a treat. Vietnamese noodles and salads, Thai fish cakes, laksa, Indonesian curries and satay or Malaysian-style fish are going to be especially welcome here.
