Story

Aymeric Roborel de Climens spent over twenty years as a winemaker in Bordeaux. Now he makes 100% French whiskies, using French malt and maturing them in oak barrels previously used by French wineries to make wine. Uniquely, these whiskies are limited editions, with flavours from barrels from a specific winery or chateau, the whisky's flavours married to the character of the oak.

And the A. Roborel De Climens spirits? They're wildly charismatic, but very different from your usual Scotch or Aussie whiskies, with more fruit, more fragrance and more generosity. Importantly, these whiskies are made with no cold filtration or colouring agents.

Merlot is the driver of this release from A. Roborel De Climens, with maturation in oak barrels from Château Guadet in Saint-Émilion that were used to mature Merlot. A double oaked whisky, this was matured in 20% new and 80% second-fill French barrels and then finished off in the Château Guadet oak. It could be a power of suggestion but we definitely see some plum and rhubarb flavour from the wine in this bronze coloured whisky, with a smoky but still not heavy finish.

PAIRING GUIDE

This interesting whisky is a charismatic, slightly offbeat choice, with its distinctive red wine flavour giving it a very different tone. We think it would work best with dark chocolates, dried fruits and nuts, with caramel and coffee flavoured chocolate truffles a very natural choice. The smoky elements in this A. Roborel De Climens whisky make it a great choice to pair with smoked meats and cheeses as well.
