Story

5Nines is a proudly small-scale Adelaide Hills distillery run by David Pearse and Steven Griguol, specialising in single-cask whisky and premium spirits.

Like many in the distilling world, the pair didn't start out as spirits makers, with Pearse in very corporate IT and Griguol a cabinetmaker. They decided to go all in on this spirits caper, however, and built their own still in Pearse's backyard.

Now, after several successful years crafting gin and liqueurs, they've graduated to single malt whisky, with a range that proudly highlights different barrel types, and an array of traceable, typically South Australian malts.

This 'Hills Cask' whisky is what the boys call a 'marriage of several casks' including Bourbon, Apera & Altar Wine barrels. The base spirit is local too, as it was crafted from South Australian malted and grown Pilsner.

A pure and delicious whisky, it has a distinctive dried fruit character, warmth, and a mouth-filling, fruit-highlighted texture.

PAIRING GUIDE

This delicious whisky's notes of dried fruit are a big flavour element, so it would also pair wonderfully with dishes that include dried or caramelised fruit. Figs, grilled stonefruit, and caramelised peaches are all great choices for something sweet, although the inherent sweetness of this style also works with seared seafood as a savoury contrast, as would grilled vegetable kebabs and smoky bean dishes, with the whisky lusciousness a great counterpoint.
